Colby Cheese was originally called "Colby Cheddar" and was named after the town where it was first made: Colby, Wisconsin. The recipe is close to that of high moisture Cheddar Cheese, but is a bit milder than cheddar. The recipe for Monterey Jack is close to Colby, except that it is white instead of yellow.
