Artisan Cheese: cheese manufactured by cheesemakers with an adherence to the traditional craft of cheese making and aging, and often in scales and sizes that contrast with other mass-produced cheeses. Here at the Mousehouse, many of the cheeses we carry could be defined as Artisan Cheese because we choose to work with smaller factories directly rather than larger factories through distributers.
